En celebración de las maravillas gastronómicas de Michoacán y de la alianza del FICM con el festival Morelia en Boca (que este año se llevará a cabo del 29 al 31 de mayo), presentamos diez platillos tradicionales que pueden disfrutar en Morelia.

Sopa tarasca: Hecha a base de frijoles molidos, puré de jitomate y chile pasilla seco. Usualmente se sirve con tiritas de tortilla fritas, queso cotija, crema, epazote y chiles serranos picados.

Corundas: Parecidas a los tamales pero de forma triangular, se sirven envueltas en hojas de maíz acompañadas con queso, crema y rajas. Cuenta la leyenda que eran el platillo favorito del emperador purépecha Caltzontzin, quien las comía en ocasiones especiales, y por esa razón también se les llama “panecillos del palacio”.

Enchiladas morelianas o placeras: Lo que distingue a estas enchiladas es que la tortilla primero se pasa por la salsa (de chile guajillo) y luego se fríe – al contrario que en otras recetas en donde primero se fríe la tortilla y luego se baña en salsa. Las enchiladas morelianas se rellenan de papas y zanahorias y van acompañadas depollo placero.

Morisqueta: Platillo originario de Apatzingan, consiste en arroz blanco de grano corto cocido con frijoles de la olla y salsa guisada con queso o carne. En una de sus versiones más populares, va acompañada de costillas de cerdo.

Carnitas estilo Michoacán: Es imposible hablar de la cocina michoacana sin mencionar las célebres carnitas de cerdo, especialmente famosas en el municipio de Quiroga. Tradicionalmente se preparan en grandes ollas de cobre (elaboradas en Santa Clara del Cobre) donde distintas partes del cerdo se fríen en manteca del mismo animal. Se sirven en tacos, con tortillas de maíz, cilantro, cebolla, salsas y jugo de limón.

Aporreadillo: Un platillo a base de cecina de res y huevo revuelto cubierto de salsa verde o roja, o en ocasiones de ambas salsas. Se dice que el aporreadillo fue bautizado con ese nombre porque la carne, después de ser secada al sol y salada, se aporreaba hasta que quedara desmenuzada.

Uchepos: Tamales de maíz tierno (elote) molido. El sabor de los uchepos es algo dulce, pero en ocasiones se sirven con salsa verde o roja, con queso cotija y crema. También pueden servirse como postre con leche condensada.

Chongos zamoranos: Como su nombre lo indica, este postre es originario de la ciudad de Zamora y la receta se le atribuye a las monjas de los conventos de la época virreinal. Se trata de leche cuajada con azúcar y canela.

Ate: El ate moreliano es famoso en todo el país y los visitantes a la ciudad pueden comprar una dotación para llevar a casa en el Mercado Valentín Gómez Farías, mejor conocido como el Mercado de dulces y artesanías, en donde hay una variedad de golosinas tradicionales impresionante. Este platillo es originario de España y fue importado a Morelia por la monjas dominicas. El ate se elabora extrayendo la pulpa de cualquier fruto (usualmente membrillo o guayaba) y luego cociéndolo con azúcar en una cazuela de cobre. Se suele acompañar con queso.

Nieve de pasta: Es originaria de Pátzcuaro, a donde viajan los habitantes de Morelia y los alrededores sólo por la nieve. Se distingue por su consistencia cremosa y se elabora con canela, vainilla, almendras y miel de maíz.

Sopa tarasca / Tarascan Soup: Made with a base of blended black beans, tomato purée and dried pasilla chilies, this soup is traditionally served with strips of fried tortilla, cotija cheese (a dry cheese), sour cream, epazote (a Mexican herb) and chopped serrano chilies.

Corundas: Similar to tamales, but triangular in shape, corundas are wrapped in corn leaves and accompanied by cheese, sour cream and sliced poblano peppers. Legend has it that this was the Purépecha Emperor Caltzontzin’s favorite dish, and that he would eat it on special occasions. That’s why they are sometimes called “panecillos del palacio”, or “palace rolls”.

Enchiladas morelianas o placeras / Morelian Enchiladas: What distinguishes these enchiladas from others is the fact that the tortilla must first be doused in a sauce made from guajillo chilies, and then fried (in other recipes the tortilla is fried before the sauce is added). These Morelian enchiladas are filled with potatoes and carrots, and served with chicken.

Morisqueta: Originally from Apatzingan (in the mid-West of the Michoacán state), this dish contains white rice, which is cooked with black beans and stewed in a cheese or meat sauce. One of the most popular versions of the dish includes pork spare ribs.

Carnitas estilo Michoacán / Michoacán Style Fried Pork: You can’t talk about the Michoacán cuisine without mentioning the region’s celebrated fried pork, which is particularly famous in the Quiroga municipality of the state. The dish is traditionally prepared in huge copper pots (made in Santa Clara del Cobre), in which different parts of the pig are fried in lard from the same animal. The meat is served in tacos, with corn tortillas, cilantro, onion, sauces and lime.

Aporreadillo: A dish made with corned beef and egg, and covered with red or green salsa, sometimes both. It is said that the “aporreadillo” was thusly named because the meat, after being dried in the sun and salted, is pounded until it comes apart.

Uchepos: Tamales made with sweet ground corn. Uchepos have a sweet taste, but are sometimes served with green or red salsa, cotija (hard) cheese and sour cream. They can also be served as a desert, with condensed milk.

Chongos zamoranos / Zamoran Chongos: As its name indicates, this desert is originally from the city of Zamora, and the recipe is attributed to the nuns of the Colonial Era. The dish is made up of curd with sugar and cinnamon.

Ate: Morelian “ate” is famous all over the country. Visitors to the city can buy the delicacy at the Valentín Gómez Farías market, which is better known simply as the “Mercado de dulces y artesanias” (Market of artesanal crafts and candy), which houses an amazing variety of candy. This dish originated in Spain and was imported to Morelia by Dominican nuns. Pulp is first extracted from any kind of fruit (normally quince or guava) and is then cooked with sugar in a copper pan. It is normally eaten with cheese.

Nieve de pasta / “Pasta” sorbet: Originally from Patzcuaro, residents of Morelia and its suburbs would travel to the small town to buy this sorbet. It has a creamy consistency and is mixed with cinnamon, vanilla, almonds and corn syrup.
